Assam is the land of approximately (twenty-five million people) located in the Northeastern side of India; this state is one of the naturalistic state. Assam is also known as the mystic land of valleys and hills. The name (Assam) is derived from a Sanskrit word, (Asom) which means unrivalled or unequal. The uneven geography of Assam, full of rivers, hills and plains, as a result have added to the name. The state of Assam was ruled by the Dynasty of Mongolian Ahom for approximately 600 years.

As we, all know that cuisine of a state reflects the tradition and culture of a particular society. It is mainly charmed by the ethnic ingredients and the soothing climate of the place. Religious food also exerts firm influences on Assam’s cuisine. Food is a sanctified part of Assam’s culture and the cooking process is stress free that reflects simple lifestyle of the dwellers.

You will find, more than (2, 30,000 hectares) of verdant green gardens of tea across the valley of Brahmaputra as well as Barak valley .The total amount of tea produced in Assam is Four Hundred million kg per annum.The region of Assam is just apt for the growth of Tea plant as it is rich with alluvial soil,and it receives more than (200-300cm) rainfall annually.
