Appam, a well admired dish of the South India. Appam are basically concave rice flattens cooked on one side merely in a bowed iron saucepan. They are characteristically dished up with a curry made up of coconut milk. Still if you cannot copy the characteristic form, the sugary, yeasty taste of this technique is genuine. A well-soured pummel will shape into a small hole (similar to a tie) all above the small appam at the time of food preparation. This craft of making the appams seems to be very radiant.
